Recipe: Lentil-Squash Soup
Ingredients:
- Lentils
- Chunks of tender squash, such as butternut or acorn squash
- Spices (turmeric, ginger, ajwain (Carom seeds), dhania (coriander seeds) and black pepper)
- Cilantro
- A dollop of yogurt
- Toasted nuts (optional, for garnish)
Instructions:
Lentil-squash soup is a hearty and nutritious dish that combines the earthy flavors of lentils with the sweet and nutty taste of squash. Lentils, which are packed with protein and fiber, are then added along with chunks of tender squash, such as butternut or acorn squash. The soup is seasoned with a blend of spices like turmeric, ginger, ajwain (Carom seeds), dhania (coriander seeds) and black pepper which complement the natural sweetness of the squash.
We used a pressure cooker for this recipe, you can also slow cook on stove top. After the lentils are cooked and all the ingredients are combined, the soup is simmered until the lentils are tender and the flavors have melded together beautifully. It’s a comforting and satisfying dish, perfect for warming up on a chilly day or for a nourishing meal any time of year.
Garnishes with fresh herbs such as cilantro, a dollop of yogurt, or a sprinkle of toasted nuts can add a finishing touch to this wholesome soup. You can serve it with bread, rice, tortillas, roti or puri.
